Jon Peña is a passionate producer specialising in exotic varieties like Gesha, Aji, Yellow Bourbon, and Ombligon.

His farm, located on the western slopes of the Andes in Huila, produces an Aji variety that reflects his meticulous care. The cherries are handpicked, floated to remove defects, and fermented twice—first for 24 hours, then for an additional 72 hours. The drying process on raised beds results in a clean, sweet, and vibrant natural coffee with a creamy acidity.
