ABOUT THE BEANS:
Farmers take ripe cherries to the Gizat washing station, where they are sorted by density, fermented for 36-72 hours, washed, and floated to remove defects.
Then, they are dried on raised tables for 8-15 days until reaching a moisture content of 11.5%.
The raised beds promote good air circulation and temperature control for even drying.
Cherries are regularly turned to avoid over-fermentation and mould.
After reaching 11.5-12% moisture, the cherries are stored in a local warehouse and then sorted by colour, density, and size before milling for export.
