Grown by Sara Gutiérrez and her husband Dayan in the lush highlands of Filandia, Quindío, this washed Castillo lot captures the region’s signature balance of sweetness and floral brightness.
Ripe cherries are hand-selected and fully washed, with a careful fermentation to enhance clarity and structure. After a meticulous drying process, the result is a cup that shines with milk chocolate sweetness, delicate orange-blossom florals, finishing with a hint of stone fruit acidity.
